Ingredients
500g of dried and salted codfish
4 medium potatoes
1 large onion
4 eggs
6 tbsp of olive oil
1/2 cup of chopped fresh parsley
Salt and black pepper to taste
Instructions
Step 1
Soak the codfish in cold water for at least 24 hours to remove the salt. Change the water at least 3 times.
Step 2
Peel and cut the potatoes into thin matchsticks. Rinse and pat dry with paper towels.
Step 3
Finely chop the onion. Heat 4 tablespoons of olive oil in a large frying pan over medium heat and cook the onion until soft.
Step 4
Add the potatoes and cook until they are golden brown and crispy. Remove them from the pan and set aside.
Step 5
Using the same frying pan, add 2 tablespoons of olive oil and the shredded codfish. Stir and cook for 5 minutes or until the fish is slightly golden. Remove it from the pan and set aside with potatoes.
Step 6
Crack the eggs in a bowl, beat, season with salt and black pepper and pour into the frying pan. Scramble it until fluffy and just set.
Step 7
Return the potatoes and fish to the frying pan, add parsley and stir gently to combine.
Step 8
Serve hot.
