Ingredients
2 chicken breasts, cooked and diced
1/3 cup mayonnaise
1 stalk celery, diced
1/4 cup dried cranberries
1/4 cup chopped walnuts
1 teaspoon dijon mustard
salt and pepper to taste
4 slices sourdough bread
lettuce leaves
Instructions
Step 1
In a large mixing bowl, combine the cooked chicken, mayonnaise, celery, cranberries, walnuts, dijon mustard, salt, and pepper. Mix well.
Step 2
Toast the sourdough bread slices.
Step 3
Place a few lettuce leaves on two slices of the toasted bread.
Step 4
Spoon the chicken salad mixture onto the lettuce, dividing it evenly between the two sandwiches.
Step 5
Top each sandwich with the remaining slices of toasted bread.
Step 6
Serve immediately and enjoy!
