Ingredients
4 boneless, skinless chicken breasts
1 cup corn kernels
1 large tomato, diced
1 cup shredded cheddar cheese
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Step 1
Preheat oven to 375°F (190°C).
Step 2
Using a sharp knife, make a pocket in each chicken breast by slicing horizontally into the center, but not all the way through.
Step 3
In a mixing bowl, combine the corn, tomato, and cheddar cheese.
Step 4
Season the chicken breasts with salt and pepper.
Step 5
Stuff each chicken breast with a generous amount of the corn and cheese mixture. Use toothpicks to hold the pocket closed.
Step 6
Heat a tablespoon of olive oil in an oven-safe skillet over medium heat.
Step 7
Once hot, add the chicken breasts and sear for 3 minutes on each side until golden brown.
Step 8
Transfer skillet to the oven and bake for about 15-20 minutes, or until the chicken is cooked through and no longer pink in the middle.
Step 9
Remove from oven and let rest for 5 minutes.
Step 10
Remove toothpicks and serve warm.
