Ingredients
4 boneless, skinless chicken breasts
2 bell peppers, sliced
1 onion, sliced
1 tablespoon olive oil
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
8 flour tortillas
Instructions
Step 1
Preheat grill to medium-high heat.
Step 2
In a small bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Whisk together to make a marinade.
Step 3
Place chicken breasts in a shallow bowl, and pour the marinade over them. Toss to evenly coat the chicken with the marinade.
Step 4
Place the chicken on the grill and cook for 5-6 minutes per side, or until an instant read thermometer inserted into the thickest part of the chicken reads 165 degrees F.
Step 5
While the chicken is cooking, add the sliced peppers and onion to a grill pan or grill basket and cook until crisp-tender, about 5-7 minutes.
Step 6
When the chicken is done, let it rest for a few minutes before slicing it into strips.
Step 7
Serve the chicken and veggies in warm flour tortillas, with your choice of toppings such as salsa, avocado, sour cream, or shredded cheese.
