Ingredients
4 boneless, skinless chicken breasts
1/4 cup dijon mustard
2 tablespoons honey
2 tablespoons lemon juice
2 tablespoons capers, drained
1 tablespoon olive oil
1/4 cup fresh cilantro leaves
1/4 cup Greek yogurt
1 garlic clove
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1
In a small bowl, whisk together the dijon mustard, honey, and lemon juice to create a sauce.
Step 2
Season the chicken breasts with salt and black pepper.
Step 3
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side until golden brown and cooked through.
Step 4
Remove the chicken from the skillet and set aside.
Step 5
Add the capers to the skillet and cook for several minutes until they are browned and crispy. Add the sauce to the skillet and stir to combine with the capers.
Step 6
Return the chicken to the skillet and spoon the sauce over the chicken. Cover and simmer for 5-10 minutes until the chicken is fully coated in the sauce.
Step 7
In a blender or food processor, combine the cilantro, Greek yogurt, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy.
Step 8
To serve, divide the chicken among four plates and spoon the cilantro sauce over each piece of chicken.
