2 eggs
1/4 cup unsweetened almond milk
1/2 tsp baking soda
1/4 tsp sea salt
1/4 tsp black pepper
Instructions
Step 1
Add the lentils to a bowl and cover with water. Leave to soak for at least 4 hours, or overnight.

Step 3
In a separate bowl, whisk together the almond flour, eggs, almond milk, baking soda, sea salt, and black pepper.
Step 4
Stir the lentil puree into the almond flour mixture until well combined.
Step 5
Heat a large skillet over medium heat. Grease lightly with cooking spray or coconut oil.
Step 6
Using a spoon or ladle, drop the batter onto the skillet and cook until the edges start to dry out and small bubbles appear on the surface of the pancake.
Step 7
Use a spatula to flip the pancake and cook for an additional 1-2 minutes on the other side.
Step 8
Repeat until all the batter is used up. Serve hot with your favorite toppings.
