2 eggs
1 can of beans, drained and rinsed
4 fresh sardines, cleaned and boned
2 tablespoons olive oil
2 tablespoons butter
Salt
Pepper
Instructions
Step 1
1. Bring 4 cups of water to a boil in a medium-sized saucepan. Add the corn grits and a pinch of salt and stir well. Reduce the heat to low and let the grits simmer for about 20 minutes, stirring occasionally, or until they are cooked and creamy.
Step 2
2. In a small saucepan, add the butter and let it melt over low heat. Crack the eggs into the pan and cook them over easy. Season with salt and pepper, remove the eggs from the pan and set aside.
Step 3
3. In a large skillet, heat the olive oil over medium-high heat. Add the sardines to the skillet and cook for about 2-3 minutes per side, or until they are golden brown and crispy.
Step 4
4. Serve the sardines with the cooked corn grits and beans, and top each serving with a fried egg. Garnish with additional salt and pepper if desired.
