Ingredients

4 chicken thighs

4 potatoes, cut into wedges

4 ripe tomatoes, diced

4 slices of bread, torn into pieces

3 cloves of garlic, minced

2 tablespoons of olive oil

1 teaspoon of salt

1/2 teaspoon of black pepper

1/4 teaspoon of paprika

1/4 teaspoon of dried oregano

1/4 teaspoon of dried basil

Instructions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large, oven-safe dish, combine the chicken thighs and potatoes. Drizzle with olive oil and season with salt, pepper, paprika, oregano, and basil.

Step 3

Roast in the preheated oven for 20 minutes, or until the chicken is cooked through and the potatoes are crispy.

Step 4

While the chicken is cooking, make the tomato sauce. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.

Step 5

Add the diced tomatoes and cook until the tomatoes have broken down and the sauce is thickened, about 10 minutes. Season with salt and pepper to taste.

Step 6

In a separate pan, toast the pieces of bread until crispy and golden brown.

Step 7

Serve the roasted chicken and potatoes with a generous spoonful of tomato sauce and a side of toasted bread.
