Ingredients
1 pound spaghetti
6 slices bacon, diced
4 large eggs
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley leaves
Instructions
Step 1
Bring a large pot of salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente.
Step 2
While the spaghetti is cooking, cook bacon in a large skillet over medium heat until crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.
Step 3
In a medium bowl, whisk together eggs, Parmesan cheese, salt, and black pepper.
Step 4
Reduce heat to low and add drained spaghetti to the skillet with the bacon drippings. Toss to coat spaghetti with the bacon drippings.
Step 5
Remove skillet from heat and add egg mixture, tossing quickly until the eggs thicken and coat the spaghetti.
Step 6
Add bacon and parsley and toss to combine.
Step 7
Serve hot, garnished with additional Parmesan cheese and parsley leaves if desired.
