Ingredients
1 lb pasta
2 sweet potatoes, peeled and cut into small cubes
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pint cherry tomatoes, halved
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, dried oregano, salt, and pepper. Spread onto a baking sheet in a single layer and roast for 20-25 minutes, or until they are tender and browned.
Step 3
While the sweet potatoes are roasting, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
Step 4
In a large skillet, heat the remaining olive oil over medium-high heat. Add the cherry tomatoes and cook for 3-4 minutes or until they start to soften.
Step 5
Add the cooked pasta and roasted sweet potatoes to the skillet with the tomatoes. Toss everything together and add a little bit of reserved pasta water to help create a sauce.
Step 6
Stir in the crumbled feta cheese, then divide the pasta among plates. Top with chopped fresh parsley and serve.
