Ingredients
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp salt
1 egg
1 cup cold water
Assorted vegetables (such as bell peppers, zucchini, onion, and sweet potato) sliced into thin pieces
Vegetable oil, for frying
Instructions
Step 1
In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
Step 2
In a small bowl, whisk together the egg and cold water until well combined.
Step 3
Add the egg mixture to the flour mixture and whisk until just combined. The batter should be lumpy.
Step 4
Heat a large pot or deep fryer filled with vegetable oil over medium-high heat until it reaches 375°F.
Step 5
Dip the sliced vegetables into the batter, shaking off any excess, and carefully add them to the hot oil. Fry until golden brown and crispy, about 2-3 minutes.
Step 6
Using a slotted spoon or tongs, remove the vegetables from the oil and drain on a paper towel-lined plate.
Step 7
Serve the tempura vegetables immediately, with your choice of dipping sauce.
